Ormai penso sappiate tutti quanto io ami la tradizione culinaria, specialmente se riferita alla buona cucina italiana! Dopo blog su blog in cui vi ho rivelato le mie ricette del cuore, oggi ho l’opportunità di parlarvi del mio ristorante preferito di tutti i tempi, avvalendomi della disponibilità di un’ospite speciale. Sto parlando del ristorante Da Vittorio, appartenente alla famiglia Cerea, che ha collezionato innumerevoli riconoscimenti, diventando uno dei pochi ristoranti tri-stellati d’Italia.
In questo luogo mi sento sempre a casa: lo staff è di un’eleganza e gentilezza senza paragoni.
Da Vittorio è un posto armonioso, caldo, ed ogni volta che ci vado mi sembra di essere circondata da amici e familiari più che di essere servita dal personale di un ristorante. Di fatti moltissimi dei miei ricordi più belli li ho collezionati proprio qui, tra piatti eccellenti e moltissimi sorrisi. Proprio per questo tengo particolarmente a questo articolo, in cui condividerò con voi le parole che ho scambiato con una delle protagoniste principali della storia “Da Vittorio”: Rossella Cerea.
- La vostra è da sempre un’impresa a conduzione familiare. Come riuscite a collaborare con così tanta armonia?
La nostra è sempre stata un’azienda fondata sul valore della famiglia. Essere in tanti ci aiuta a dividere le forze e a dedicarci a ciò che ognuno di noi sa fare meglio. Le attività a cui ci stiamo dedicando sono davvero tante e se non fossimo una famiglia così numerosa, seguirle tutte sarebbe impossibile. Ognuno di noi cerca di dare tutti i giorni il meglio di sé per l’azienda. Non è sempre facile, a volte abbiamo idee diverse, ci confrontiamo, ogni tanto ci scontriamo anche, ma ciò che conta è che siamo tutti indirizzati verso un obiettivo comune: il bene della nostra azienda.
- Ci sono dei valori che tentate di trasmettere attraverso il vostro lavoro?
Assolutamente sì, i valori che vogliamo trasmettere sono quelli in cui crediamo da sempre: la costanza, la determinazione e l’importanza di fare squadra.
- Ritenete ci sia un “ingrediente segreto” che vi ha resi in grado di conquistare il prestigioso riconoscimento delle Tre Stelle Michelin e la fama che ne è derivata?
In realtà non pensiamo che esista un vero e proprio ingrediente segreto. Quello che secondo noi veramente conta, è lavorare ogni giorno con passione. È l’amore per il nostro lavoro che ci spinge ogni giorno a fare bene. L’obiettivo non è il premio, ma è necessario lavorare per raggiungere il traguardo, costanza e passione premiano e i riconoscimenti arrivano da soli.
- Parlando di cucina plant-based che negli ultimi anni sta diventando sempre più ricercata, cosa ne pensate?
Sicuramente questa nuova tendenza è molto importante per preservare il futuro del nostro pianeta e di tutto ciò che ci circonda.
- Avete dei progetti futuri da condividere con noi?
Tantissimi, ma non tutti si potranno realizzare, ma appena saranno in fase di definizione sarete i primi a saperlo.

By now I think you all know how much I love the culinary tradition, especially if it refers to good Italian cuisine!
After blog on blog in which I revealed my favorite recipes, today I have the opportunity to tell you about my favorite restaurant of all time, taking advantage of the availability of a special guest.
I'm talking about the Da Vittorio restaurant, belonged to the Cereafamily, which has collected countless awards, becoming one of the few three-starred restaurants in Italy.
In this place I always feel at home: the staff is of unparalleled elegance and kindness.
Da Vittorio is a harmonious, warm place, and every time I go there I feel like I'm surrounded by friends and family rather than being served by the staff of a restaurant.
In fact, I have collected many of my best memories right here, including excellent dishes and many smiles.
Precisely for this reason I particularly care about this article, in which I will share with you the words I exchanged with one of the main protagonists of the story "Da Vittorio": Rossella Cerea.
- Yours has always been a family business. How do you manage to collaborate with so much harmony?
Ours has always been a company founded on the value of the family. Being many helps us to divide our forces and to dedicate ourselves to what each of us can do best. The activities we are dedicating ourselves to are so many and if we were not such a large family, following them all would be impossible. Each of us tries to give the best of himself for the company every day. It is not always easy, sometimes we have different ideas, we confront each other, sometimes we also clash, but what matters is that we are all directed towards a common goal: the good of our company.
- Are there any values you try to convey through your work?
Absolutely yes, the values we want to convey are those we have always believed in: constancy, determination and the importance of being a team.
- Do you think there is a "secret ingredient" that has enabled you to win the prestigious award of the Three Michelin Stars and the fame that came with it?
We don't actually think there is a real secret ingredient. What really matters in our opinion is to work every day with passion. It is the love for our work that drives us to do well every day. The goal is not the prize, but it is necessary to work to reach the goal, perseverance and passion reward and the awards come by themselves.
- Speaking of plant-based cuisine which in recent years is becoming more and more sought after, what do you think?
Surely this new trend is very important to preserve the future of our planet and everything around us.
- Do you have any future projects to share with us?
Many, but not all of them can be realized, but as soon as they are in the definition phase you will be the first to know.
